Homemade Pesto

I finally made it into the kitchen and made something from our very own garden...homemade pesto!

It's been several years now since I made a homemade batch of pesto!

I start with my very own basil harvest...

This is our basil plant after I chopped it up...maybe I might get one more crop before the cold gets here...

My favorite recipe for my homemade pesto...easy, simple and fresh.  I found the recipe from a cookbook that my sister-in-law Cheryl gave me for one Christmas.  It's a recipe from Betty Crocker's New Cookbook, Everything You Need to Know to Cook.

2 cups firmly packed fresh basil leaves
3/4 cup grated Parmesan cheese
3/4 cup olive oil
3 cloves garlic
1/4 cup toasted pine nuts
Place all ingredients in blender or food processor.  Cover & blend on medium speed about 3 minutes, stopping occasionally to scrap sides, until smooth.  One batch makes about 1 1/3 cups sauce.

The end result...3 batches!  Makes fresh tomato soup taste delicious, great on pizza, foccacia, grilled chicken, spread on sandwiches, mixed in salads, ...

Three containers to freeze for future use, and one for tonight's dinner: Pasta!!!
