4th of July Parade in Apple Valley, MN
One of my favorite holidays is the 4th of July! RED, WHITE & BLUE!
This year I was able to make it to Apple Valley's 4th of July parade. The weather was sunny, cool and perfect!
Afterwards, we had a family barbecue at my brother-in-law's...hamburgers, hot dogs & brats...yummy! Jan, sister-in-law, made delicious Piña Coladas with this really good coconut rum she brought from the Bahamas and her super moist Rum Cake!
Hubby and I brought a Roasted Red Potato Salad to share, which was super easy to make and best of all was super good!
I didn't follow a recipe. I tossed about 9-12 small quartered red potatoes with Italian olive oil, coarse sea salt, black pepper and about a tablespoonful of minced garlic. I roasted them in a preheated oven at 400 degrees. I roasted them for about 15-20 minutes on one side, and then turned them over and roasted them for another 15-20 minutes or until done. The kitchen smell so good!
I cooled the the potatoes once they were finally roasted and put them in a mixing bowl. I added about 1/4 cup finely diced onion, black olives, and cooked eggs. I then added about 3/4 cups of Best Foods sandwich spread and mixed all ingredients until well coated.
Once all was blended well, I transferred the salad to a clean salad bowl and added sliced cooked eggs on top and sprinkled with lots of paprika. I used a total of about 10 eggs, and one 15 oz. can of black olives.

If you decide to give this salad a try, just remember that all of the seasoning were added to my taste. I like it garlicky and a bit salty!
